Awesome! Thanks for this post, although it is both kind and cruel. Everything looks so good - its torture. See you in two weeks.

Hi Richard,

My name is Amelita and I am a food blogger from Australia. I have been watching you on Top Chef in Australia and I have to say that you are my favourite contestant. We just finished watching the episode with the lunch boxes. 'Do you like Burritos?'I must say your take on food is absolutely wonderful and I believe my faavourite episode so far is the one with yourself and Dale creating that tofu that tastes like beef dish. Now I don't like tofu but you had me drooling watching you make it. 'This tofu tastes like beef. What's up with that!' Seriously I laughed my arse off. You are very funny and witty.

I hope you keep up the blogging. I only found your blog today and I must say I am looking forward to going through it and having a good read. I am adding your blog link on my web page, please don't feel obligated to do the same I just like to let people know when I list them.

Keep up the fantastic work and you have quite a little fan base here within our family. You are inspiring :)

Cheers
Amelita (AKA Squishy)

Chef,

Could you put captions on your pictures at richardblais.net? I'd love to know if the green sauce you paired with the skate is jalapeno or spinach, or if the foam on the baby octopus is parmesan or coconut, for example. Thanks!

Richard, any update on when Flip opens? There seems to be a lot of false information floating around the web.
